WThis is an easy version of a beverage from our latest menu. Designed as a large-volume pre-mixed that's bursting full of essence of a holiday season, rendering it ideal for hosting a holiday party. Any leftover cordial to use in brunch beverages, puddings, or to make another batch of this cocktail.
Bikini Recipe
Serves 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Cordial: Put the listed ingredients in a pot, bring to a gentle boil, agitating to dissolve. Next, take off the heat allowing it to cool fully. Decant into a clean bottle, cap it and refrigerate it in the refrigerator, it will last for up to four weeks.
For the Premix: Mix every liquids in a big jug, leave to sit for 60 minutes, then strain preferably using a fine cloth, so it's perfectly clear.
When ready to serve: Pour 85ml of your premix to a stirring glass containing ice, and stir carefully for a minute to cool it down. Strain into an frosted cocktail glass or similar, garnish with some cranberries adding the final touch using a brief mist of the essential oil over the top.
